Dinner Tonight: Meatloaf Like Mom Use To Make

Welcome to my food and recipe blog.  Tonight’s tip for dinner is old fashion meatloaf like our mom’s use to make, with potatoes, onions and green beans in a mushroom soup sauce.  You know like back when we would actually sit down for dinner, at a table.  This will take about 15-20 min. to prepare and about an hour to cook.

Lets Start With The Meet Loaf!

You need:

  • 2lbs of beef / pork mixture of ground meat.
  • Appr. 2 cups of seasoned breed crumbs. (un-seasoned is ok if that all you have).
  • 1 large can of tomato sauce.
  • small can of mushrooms.
  • one medium size onion.
  • one green pepper.
  • salt, pepper, oregano and any other Italian seasonings you like.  Season to taste.
  • A Squirt of Ketchup
  • 2 eggs.
Cut all your vegetable into small pieces.  Some of them can be a little chunky in size.  
Preheat oven to 350 degrees.

 

In a large bowl add your meat, onions, peppers and mushrooms.  Add a dash of salt and pepper and any seasonings that you like.  I use a mixture of Italian seasonings that I buy at the local grocery store.  Just don’t over do it with your spices.  Add your eggs to the mixture.  Now mix all of that together.  After the vegetables are evenly mixed though the meet you can add your tomato sauce and ketchup.  Mix it again.  Now you can slowly mix in your bread crumbs.  Add a little mix a little.  Add a little mix a little.  Keep adding breadcrumbs until you get a loaf to start to form.  You will need appr 2 cups of bread scrums but you can add more or less as needed.  Form your mixture into a loaf and place it into a baking dish.  I like to sprinkle some bread scrums over the top of the loaf.

Now take a couple potatoes and a couple onions. 3 or 4 of each depending on how many you are serving.  Clean the vegetables and cut them into 4 pieces.  Place them in the baking dish around the meatloaf.  Salt and pepper them to taste.  Cover the baking dish with foil for the first half of baking.

Your going to Bake the meatloaf at 350 degrees for a lease one hour.  You can put it in the oven now.

Now we are going to prepare the green beans.  This is easy.  All you need is two cans of green beans or if your using frozen then a large bag of them.  You need one can of mushroom soup.  Mix the green beans and mushroom soup together with a spoon.  The soup will be a little think but that’s ok.  Add the mixture to a small baking dish and sprinkle bread crumbs over the top.  I bake both the beans and meat at the same time.  I bake the greens beans for about 35-45 mins at 350 degrees.

Be sure all your food is totally cooked before eating.  If you made a larger meatloaf you may need to cook it longer.  The top of your meatloaf will be nice and crisp when it is done.
